Thai Style Wrap
2 cups diced cooked chicken or turkey breast
3 cups shredded cabbage
1 cup shredded carrot
1 medium red bell pepper, thinly sliced
1 medium red onion, thinly sliced
1 (8-ounce) can pineapple tidbits, drained with juice reserved
1 cup HOUSE OF TSANG® BANGKOK PADANG™ peanut sauce
6 (10-inch) flour tortillas

In large bowl, combine turkey or chicken, cabbage, carrots, bell pepper, onion, pineapple, 2 tablespoons pineapple juice and peanut sauce. Divide mixture evenly among each tortilla. Roll up and serve. Serves 6.

Chicken Tikka Masala
2 tablespoons vegetable oil
1 pound boneless, skinless chicken breast, cubed
1 (15-ounce) jar PATAK'S® Tikka Masala Cooking Sauce
Hot cooked rice

In large skillet, over medium-high heat, heat oil. Add the chicken and sauté 2 minutes. Add the cooking sauce and stir well. Reduce heat, cover and simmer for 25-30 minutes, stirring occasionally until the chicken is cooked through. Serve over hot cooked rice. Serves 4.

Chicken Mole Bake
1 (about 4 pounds) cut-up fryer chicken
Salt and pepper to taste
1 tablespoon oil
1 (8.25-ounce) jar DONA MARIA® mole
4 cups chicken broth
1 cup sliced almonds
1/4 cup sesame seed

Preheat oven to 350°F. Rinse chicken pieces and place on a rack in a shallow baking pan. Spray with nonstick coating spray or brush with oil. Season with salt and pepper. Bake uncovered at 350°F for 1 hour or until internal juices are no longer pink. Meanwhile, heat oil in 2-quart saucepan. Stir in mole and heat for 1 to 2 minutes; stir constantly. Gradually add chicken broth; stir to dissolve mole. Bring to boiling, reduce heat and simmer, covered with lid slightly askew, for 1 hour. Stir frequently. Spread almonds on a cookie sheet. Bake at 350°F until lightly toasted (about 2 to 3 minutes); stir frequently and watch carefully so they will not burn. Remove chicken from oven and transfer to serving plate. Top with almonds, some of the mole mixture and sesame seed. Serve with remaining mole mixture. 8 servings.

Mediterranean Bruschetta
18 (3/4-inch) thick baguette slices
¼ cup CARAPELLI® extra-virgin olive oil
4 cloves garlic, divided
3 cups thinly sliced mushrooms such as cremini, oyster, and shitake
2-3 PELOPONNESE® roasted sweet red peppers, thinly sliced into 1½-inch pieces
1/3 cup PELOPONNESE® pitted kalamata olives, quartered
1/8 teaspoon ground black pepper
¾ cup shredded Fontina or Monterey Jack cheese

Preheat broiler. Lightly brush both sides of bread with a small amount of olive oil. Broil bread under broiler until golden brown on both sides, turning once. Meanwhile, in large skillet, stir in 1 tablespoon olive oil, sauté 2 cloves minced garlic and mushrooms over medium high heat until lightly browned and slightly softened; about 3-5 minutes. Add roasted peppers, olives and ground black pepper; remove from heat. Brush top side of toasted baguette slices with remaining garlic cloves (cut in half). Top bread with mushroom mixture and sprinkle with shredded cheese. Makes 18 appetizer servings.
